Keto Cheesecake Squares with Peanut Butter
A healthy and creamy treat that won't last long in your fridge.
- 1½ cups almond flour
- 2 tbsp monkfruit sweetener
- 2 oz cream cheese softened
- 3 tbsp unsalted butter softened
- 1 tbsp vanilla extract
- 12 oz cream cheese softened
- 2 large eggs
- ¼ cup heavy cream
- ¼ cup monkfruit sweetener
- 1 tsp vanilla extract
- 2 tbsp peanut butter
Preheat the oven to 350F
Place all the crust ingredients in a bowl. Beat the ingredients with an electric mixer until all combined. You could also place them in a food processor for 1-2 minutes.
Prepare an 8x8 inch pan with parchment paper. Spread the dough on the bottom until is evenly flat.
Place your crust in the oven for 10min.
Mix all your filling ingredients in a a bowl with an electric mixer or a food processor until all is well combined.
Take your crust out of the oven and pour the filling mixture on top. Drizzle 1 tbsp of peanut butter and mix it by making s-shapes from side to side.
Place the pan in the oven for 35-40 minutes or until the center is slightly firm.
Let it cool for 30 minutes before cutting. Enjoy!
