In a small sauce-pan on medium heat, pour the unsweetened almond milk. Wait for it to simmer.
Add the monkfruit sweetener, cauliflower rice, cinnamon, and vanilla extract. Stir until combined.
In a small mixing bowl, beat the egg yolks.
To temper egg yolks, add a small amount (2-3 tbsp) of the warm milk mixture while whisking at the same time. Whisk it for a couple of seconds and add them to the sauce-pan.
Whisk non-stop until thickened. If you stop whisking the mixture, it will curdle. Do so for about 5-7 minutes, or until thickened.
Let it cool before serving.
